چکیده

The intake of large amounts the antinutrient oxalate can induce hyperoxaluria, an important risk factor for development calcium stones. soluble and total concentrations plants Fabaceae, Convolvulaceae, Malvaceae families were determined using HPLC-enzyme-reactor method. Sweet potato is a species Fabaceae includes beans, lentils, peas, licorice blue fenugreek, whereas okra cocoa are family. Total content was highest in root (Glycyrrhiza glabra; 3569 mg/100 g), medicinal herb sweetener candies, fenugreek (Trigonella coerulea; 1246 g) white beans (Phaseolus vulgaris L.; 548 amounted to 496 g sweet (Ipomoea batatas), 619 powder (Theobroma cacao) 317 (Abdelmoschus esculentus), most agricultural crops Convolvulaceae Malvaceae, respectively. findings suggested that foods these plant contain high excessively concentrations. consumption oxalate-rich negatively impact stone formation.

Oxalate content in common Japanese foods.

The radioenzymatic method was used to determine the oxalate contents in common Japanese foods. High concentrations of oxalate were detected in spinach, Perilla frutescens, pepper, sesame, chocolate, and tea. Beer and coffee also contained some oxalate. Fruit and meat were low in oxalate content. Therefore, among the common Japanese foods, the most important foods to be avoided to restrict oxala...

Oxalate and phytate of soy foods.

The consumption of foods made from soybeans is increasing because of their desirable nutritional value. However, some soy foods contain high concentrations of oxalate and/or phytate. Oxalate is a component of calcium oxalate kidney stones, whereas phytate is an inhibitor of calcium kidney stone formation. Thirty tested commercial soy foods exhibited ranges of 0.02-2.06 mg oxalate/g and 0.80-18....

Oxalate content of foods and its effect on humans.

Oxalic acid and its salts occur as end products of metabolism in a number of plant tissues. When these plants are eaten they may have an adverse effect because oxalates bind calcium and other minerals. While oxalic acid is a normal end product of mammalian metabolism, the consumption of additional oxalic acid may cause stone formation in the urinary tract when the acid is excreted in the urine....

b-Cryptoxanthin- and a-carotene-rich foods have greater apparent bioavailability than b-carotene-rich foods in Western diets

b-Carotene (BC), b-cryptoxanthin (CX) and a-carotene (AC) are common carotenoids that form retinol. The amount of retinol (vitamin A) formed from carotenoid-rich foods should depend chiefly on the bioavailability (absorption and circulation time in the body) of carotenoids from their major food sources and the selectivity and reactivity of carotene cleavage enzymes towards them. The objective o...
